If ever there was an easy vegan loaf it’s this one. Inspired by my partner’s ex wife’s partner’s mother (we like to keep things in the family!) I’ve added in the lime & raspberries with lime drizzle over the top.
In its plainest form it’s completely delicious – so if you have neither lime nor raspberries don’t worry – a few raisins will suffice.
I’m sure lemon icing would be nice too – it is cakeish after all!
Also I tend to use wholemeal flour & coconut sugar but whatever you have will work. If the batter is a little on the dry side just add a dash more coconut cream.
Ingredients
1 heaped cup flour
½ cup sugar
1 cup dessicated coconut
1 cup coconut cream
3 level tsp baking powder
2 limes, zested & juiced
1/2 cup raisins or raspberries
2 Tbl castor sugar for drizzle
Method
Heat oven to 180C.
Sift flour and baking powder. Add sugar and dried coconut.
Mix in coconut cream, lime zest and raspberries.
Bake for 1 hour
Mix lime juice & castor sugar over low heat. When the cake is done poke holes with a skewer and drizzle with lime juice a little at a time.
Sprinkle with a little dessicated coconut and leave to cool completely.
